Ingredients
350 g flour 0 w 280
150 g honey or molasses
100 g brown sugar
1 whole egg
150 g of butter
2 teaspoons of ginger
2 teaspoons of cinnamon
½ teaspoon or 5 cloves powder
½ nutmeg
1 tsp baking soda

Procedure:
Put the butter (softened at room temperature) and sugar in the jug. 50 Sec. Speed 3.
Add the egg and honey or molasses which will give a more amber color 15 Sec. Vel. 3/4.
Gradually add the flour and other powders and mix. 10 Sec. 5.
Knead. 1 Min. Speed Ear.
Remove the dough from the bowl, spread it between two sheets of lightly floured parchment paper and place in the fridge for at least an hour.
Roll out to 7 mm and cut with the appropriate molds. To detach the men without breaking them and without difficulty, possibly make another passage in the fridge.
Place on the dripping pan with parchment paper in a hot ventilated oven at 180 ° C for 12 minutes then continue for another 5 minutes, again with a ventilated slit oven so that they dry becoming more crispy.
Once out of the oven they will still be soft, they will become crunchy when cooled.
