Ingredients
6 eggs
100 g glucose
160 g sugar
160 g cream
100 g almond powder
160 g flour
30 g cocoa powder
10 g baking powder
110 g butter
70 g dark chocolate
For the syrup:
200 g water
200 g sugar
For the glaze:
500 g dark chocolate
130 g rice oil
160 g chopped toasted almonds
Method
In a bowl put the eggs with the sugar and the cream and mix with a hand whisk, add the glucose, the almond flour and the cocoa, stir and add the previously sifted flour and yeast. Finally, add the melted butter and chocolate in the microwave and mix well. Grease and flour the mold and pour the dough.
Bake in a static oven at 170 ° C for about 45 minutes. Remove from the oven and let it cool down well, then wet it with the prepared syrup.
We glaze the cake and decorate as desired.
For the syrup
boil water and sugar and let it cool.
For the glaze:
Melt the chocolate in the microwave, add the oil and mix well, add the chopped almonds.
