Ingredients for 2 trays of biscuits:
300 g of 00 flour
150 g of cold butter in small pieces
90 g icing sugar (strictly)
1 whole egg
½ vanilla bean (seeds)
1 pinch of salt

Procedure:

Combine all the ingredients, except the flour, and place in a kitchen mixer or thermomix for about 15 seconds, speed 5. Then add the flour for about 30 seconds speed. ear.
Remove the pastry from the jug, sprinkle with a little flour and compact into a rectangular loaf and place in the fridge for at least 2 hours wrapped in cling film. Spread the pastry between 2 sheets of parchment paper, this will greatly simplify the drafting and will give a very smooth appearance to the surface.
Move the same sheet on the oven tray, I recommend the borderless biscuit sheet so that the air and heat circulate evenly.
Coppare the biscuits inside the pan without leaving a margin, so as there is no yeast they will not lose their shape which will remain perfect without any movement that would modify the final result. Remove the scraps that we work quickly and leave in the fridge, roll out and proceed as before, immediately after the first batch.
