CHOCOLATE AND DATES CAKE

Ingredients:
for the base:
4 eggs
200 g pitted dates - leave some aside for decoration (if you don't like them, you can also replace them with pears or other fruit)
120 g of 00 flour
240 g of cane sugar
250 g of dark chocolate
120 g of butter
1 pinch of salt
1 sachet of baking powder
For the mascarpone cream:
5 walnuts
500 g of mascarpone
120 g of icing sugar
200 ml of fresh cream for desserts
Procedure:
Pour the dark chocolate into a saucepan with the butter cut into small pieces and melt the mixture over very low heat. In a bowl, whisk the sugar with the eggs with an electric mixer or by hand.
When the mixture is swollen and homogeneous, add the melted chocolate, flour, baking powder and a pinch of salt. Finally, cut the dates into small pieces or according to your preferred size and incorporate them into the dough.
Thermomix procedure
Chop the dark chocolate 15 sec speed 7. Add the butter and sugar 2/3 min 50 ° speed 2/3. Wait for it to cool and add the rest of the ingredients except the yeast 2 min speed 5/6, and add the yeast for the last 20 sec.
Finally, cut the dates into small pieces and gently add them to the dough.
Mix the mixture until it is smooth and homogeneous and transfer it to a 20 cm mold previously greased and floured. If you want your cake not to be too high, you can use a mold with a diameter of 22-24 cm.
Bake the cake in a preheated oven at 180 ° C for about 50-60 minutes depending on the mold used and the characteristics of your oven.
As soon as you take out the cake and let it cool
for the filling
Whip the cream until stiff and set aside.
Mix the mascarpone with the icing sugar and then mix with the cream with a spatula with movements from the bottom up.
We compose our cake
Cut into three parts, with a saw knife, the base of the cake, fill with part of the mascarpone cream and crumble over half of the walnuts, put another disc and then again the cream and walnuts ... complete with the last disc and decorate as desired with the remaining cream
