CHEESECAKE WITH BERRIES

Time of realization: 30 minutes + rest in the refrigerator

Ingredients
for the base:
150 g of dry Saiwa biscuits
80 g of butter
for the cream:
400 g of white yogurt
250 g of philadelphia
3-4 tablespoons of forest fruit spread
8 g of isinglass
100 g mixed berries (frozen)
to decorate:
berries to taste
Procedure:
Start preparing the Berry cheesecake with yogurt. Chop the biscuits and mix them with the melted butter, line a pan with parchment paper and place the biscuits making them adhere well to the bottom.
Leave the biscuit base in the refrigerator for about 20 minutes and in the meantime prepare the cream.
Heat two tablespoons of yogurt and add the isinglass, which you have previously soaked in water and squeezed, and mix well until it is completely dissolved.
In a bowl, pour the philadelphia, the remaining yogurt and the forest fruit spread, turning from bottom to top with a spatula, finally incorporate the yogurt with the isinglass.
Take back the biscuit base, put the frozen berries and pour the cream over it, leveling it well. Leave the Cheesecake in refrigerator at least 3 hours.
Take back the cake and decorate it with berries.
Your berry cheesecake is ready to serve.
Note if you do not use the spreadable cream but make the berries sauce then add 100 g of powdered sugar.
