Ingredients for 6 people:
400 g of 00 flour
2 eggs
1 yolk
40 g of melted butter
80 g of sugar
1 vanilla bean
the grated rind of one lemon
1 tablespoon of extra virgin olive oil
2 g salt
4 tablespoons of Grappa
natural dyes (yellow, red and green)
icing sugar

Method
In a bowl, collect the flour, sugar, lemon zest, vanilla bean seeds and salt, and mix.
Add the eggs, butter, oil and grappa necessary to obtain a firm and well blended dough. Divide the mixture into three parts and add coloring to each.
Form the loaves, wrap them in plastic wrap and let them rest for thirty minutes.
With the help of a rolling pin, roll out the 3 doughs until you get thin sheets. With the help of a wheel, obtain many colored noodles.
Wrap the noodles around steel tubes used for cannoli or use artisan rolls of aluminum foil like I did.
Transfer them to a baking tray lined with parchment paper and cook for a few minutes at 180 ° C.
Remove from the oven and immediately remove them from the mold otherwise they will break.

Once cold, sprinkle with powdered sugar. Excellent accompanied by lemon custard.
