Turmeric Schiaffoni with cod fillet
Ingredients:
320 gr of pasta in the shape of slaps or paccheri.
600 gr of fresh cod fillet.
400 gr of peeled tomatoes… I am home-made.
A clove of garlic.
A handful of salted capers.
10 green olives in brine.
Extra virgin olive oil to taste.
Salt and Pepper To Taste.
Chopped parsley, a sprig.
Procedure:
In a pan, brown a clove of garlic crushed in a little oil, remove it as soon as the oil has taken on its perfume.
Pour in the peeled tomatoes, olives and capers and cook them over medium heat for 5 minutes.
After five minutes, put the clean, boned and skinless fillets, season with salt, (but remember that there are capers), They will cook in a moment, 7 minutes at the most.
In the meantime, bring water to a boil in a saucepan, add salt and pour the slaps in it, add a teaspoon of turmeric powder.
Follow the cooking instructions and drain the pasta al dente, pour it into the pan with the sauce, where in the meantime you have crumbled the fillet
Skip the pasta by hanging the cooking water from it ... create a cream and serve.
Take some steps ... pasta and sauce, finish with a freshly ground pepper and chopped parsley ... I put some basil flowers.
