Trenette with scented courgettes
Ingredients for 4 people:
320 gr of trenette or fettuccine
One medium courgette
One medium Tropea onion
Extra virgin olive oil to taste
Spices… cumin, turmeric, coriander powder, mustard seeds
A pinch of chili powder
Mint, a sprig
1 clove garlic
Ginger as much as garlic
Salt and Pepper To Taste
Procedure:
In a pan pour the oil, about three tablespoons with a hint of all the spices, half a teaspoon of mustard seeds, the garlic and the ginger paste.
Let it go until the seeds start to crackle and then add the courgette cut into rather small cubes and the Tropea onion cut into small fillets. Let it go over medium / low heat, adjusting with salt and pepper for the cooking time, about 20 min
Bring salted water to a boil in a saucepan and pour the trenette, drain them al dente and pour them into the prepared sauce.
Pour a few ladles of water into the pasta to finish cooking it and add a little starch. Finish when everything is thickened.
Serve with some fresh mint and serve
