I thought about making a parmigiana or a cake pan (this is always a problem as to how to call my recipes ... in any case I always post a step by step ... almost precise)
The main ingredients used are two:
the zucchini
fillets of paddlefish or better known as flag fish or scabbard fish (fillet them by your fishmonger)
salt
cheese (in this parmigiana I used very old Asiago)
bread crumbs
oil for frying (I extra virgin)
I cut the courgettes into slices and fried them ...
I drained the excess oil and greased a deep oven dish.
I sprinkled it with some breadcrumbs and made the first layer of zucchini.
I lightly salted with Himalayan salt and put the spatula fish on top of the courgettes
So even on the fish a little breadcrumbs only
Then second layer of courgettes ...
After the second layer of courgettes, I sprinkled everything with a generous grating of very old Asiago ...
... and I finished it all with breadcrumbs and extra virgin olive oil.
Baking for 15 minutes in a preheated oven at 190 ° C I took it out of the oven.
