Method

The ingredients:

  • 1 cup quinoa
  • 2 cups of water
  • 1 courgette
  • 1 red pepper
  • 1 yellow pepper
  • 1 carrot
  • 1 head of lettuce or rocket
  • 1 lemon
  • Extra virgin olive oil
  • Salt and Pepper To Taste
  • Fresh aromatic herbs (basil, parsley, mint) to taste
  • Fresh goat cheese (optional)

Start by preparing the quinoa: rinse under running water and remember that it must be cooked in twice the volume of salted water. After boiling, put the lid on and let it cook for approx 15 20-minute until all the water is absorbed. Turn off the heat and let it rest for a few minutes before fluffing with a fork.

Cut the vegetables into cubes or slices and grill on a grill or in a pan with a drizzle of olive oil until soft and slightly golden. In the meantime, wash and cut the lettuce or rocket and arrange on the plate.

Let the grilled vegetables cool and prepare the seasoning with lemon juice, oil, salt, pepper and the herbs you have chosen. Combine everything, season and serve. If you want you can also add some goat cheese, lighter than the others.
