PITTA OF ANCHOVIES
Ingredients
Anchovies about 600/700 gr
2 cloves garlic.
Origan.
Semolina 2 tbsp.
Stale bread 2 rolls of 80 gr.
Salt and extra virgin olive oil to taste
First clean the anchovies by removing the head and bones, rinse them well under running water, dry them and set them aside. Cut the bread into cubes and together with the minced garlic cloves, put it in the thermomix jug or where you generally prepare the panure, then at speed 6/7 for about 2 minutes until you get a very coarse panura.
At this point we begin to prepare the pitta in the pan, pouring a generous amount of oil into the bottom and immediately after
sprinkling the panura
insert the anchovies and make three layers alternating everything with anchovy panura a drizzle of oil and very little salt.
As soon as the layers are finished, we put on the fire and at a moderate flame we fry for about 10 minutes per side
helping us with a suitable dish to turn the pitta.
