A remarkable turnover that has pushed theANPA (National Academy of Hotel Professions) and the CNA of Rome (National Confederation of Crafts) to establish the first international school for Made in Italy ice cream. A training project with the aim of teaching the art of this craft, but starting from afar: from the production stages to the cone served to the customer. In short, an all-out path, which aims to preserve the traditional methods of this noble art.

Italian or French?

Tracing the history of ice cream would be quite complex. According to historians, in fact, already in ancient times a very similar product was used (cold preparations of fruit and honey). In fact, he was a chef from Palermo Francesco Procopio dei Coltelli, to develop the modern ice cream formula. However, the first to taste this wonder in 1686 were the French, as Francesco opened a Paris his ice cream parlor: the Procope Cafe. Here they served, and still serve today, coffee, cold drinks, slushes and obviously ice creams.
