For the preparation of 8 courgettes you need

Ingredients:

8 medium round courgettes
70 gr of minced meat of black Calabrian pig, preferably from the thigh
30 g of lard from Calabria black pigs
10 desalted capers
40 gr of coarsely breadcrumbs
A buffalo mozzarella to use only the internal milk
30 g of pecorino romano, seasoned pepper and parmesan
A sprig of mint
A clove of garlic
6 raisins of sultanas
Salt and Pepper To Taste
Extra virgin olive oil to taste

Procedure:

Peel off the top of the courgettes, wash and dry them, remove the meat from the meat with a spoon or a suitable tool. Be careful not to damage the outside. Prepare the filling in a boul. Shred the lard and add it to the minced meat, the chopped capers, the breadcrumbs and all the other ingredients.
