Ingredients
A package of round puff pastry
800 g of zucchini
200 g of diced bacon
3 eggs
40 g of grated Parmesan
100 g of smoked cheese or provolone
an onion
salt, pepper, oil
Method
Wash, dry and trim the courgettes, cut them into slices that are not too thin. Put in a pan a drizzle of oil, the chopped onion and brown it a little, add the courgettes, salt them, cover them with a lid and cook about 10 minutes.
Meanwhile, in a separate pan, put the bacon without seasoning, let it brown well and then add to the zucchini, let it all flavor for a couple of minutes and turn off letting it cool.
Beat the eggs with salt, pepper and grated cheese. Cut the smoked cheese into cubes.
Grease and flour a pan, lay the puff pastry making the edges go down well, pour the courgettes with the bacon inside, level gently, pour the beaten eggs evenly over the top, distribute the cubes of scamorza cheese over the entire surface and bake at 200 ° C for about 40 minutes, until golden brown.
