Ingredients for the tiramisu cream:
150 g of pasteurized tiramisu base
5 g of gelatine sheets
170 g of mascarpone
170 g of fresh semi-whipped cream

for the pasteurized tiramisu base:
60 g of egg yolks
100 g of granulated sugar
35 ml of water

for the bath:

Espresso
granulated sugar to taste
ladyfingers to taste

Pasteurized tiramisu basic procedure:
in a saucepan put the water with the sugar and bring everything to 121 ° C, then pour it over the lightly whipped egg yolks, incorporate the gelatin previously soaked in cold water and well squeezed. Then, whip until cool.
For the tiramisu cream:
take the pasteurized base and add the mascarpone and finally the semi-whipped cream. Gently turn from bottom to top.
For the syrup:
make espresso coffee and sweeten it according to your tastes.

Mounting:
take the mold, put a part of tiramisu cream, the ladyfingers soaked in the syrup, the other part of the cream and finally the last layer of ladyfingers with the syrup. Transfer everything to the freezer.
Once frozen, fill with cream and finish the decoration with the flamed meringue. Put it in the fridge for 5 hours before consuming it.
