Preparation of cavatelli

Arrange the flour in a small pile. Add water and salt a little at a time, then the oil, and knead by hand. After kneading the dough, let the mixture rest for about half an hour. Once the time has passed we begin to cut the dough into pieces, be careful, take a piece of no more than no more than 1 cm. Exert a little pressure and hollow out the cavatello inside, curling the edges. Some also use a fork. Then let the pasta dry, put it in the fridge for a few hours. After these operations the cavatelli can be boiled in water.

Prepare a dough with 300 grams of durum wheat flour from which to obtain the cavatelli using the method explained above. Arranging the ingredients for the condiments, preparing the sauce with sautéed onion and garlic; previously cook some sausage and aubergines. When they are cooked, after starting to cook the sauce, crumble the sausage and cut the aubergines into small pieces and add everything to the pan. Cook everything for a good half hour. Prepare a baking dish on which to place the cavatelli to be seasoned and cooked together with the sauce. Add basil, salt, breadcrumbs, mozzarella and parmesan to make the crust. Cook in the oven for 20 minutes over high heat, being careful.
