This is just one of the many proposals to savor, together with al Libum of Cato (a mix of ricotta, egg and bay leaf), chard flavored with oriental spices and marinated ossobuco with coriander, leek, almonds and cooked apple. The project took two years of study before being put into action. The result is an inn that embodies the essence of Romanism. At the Caupona restaurant it is drunk in glasses, the wine is kept in the typical amphorae and each recipe is proposed in the classics terracotta dishes.
Nothing is left to chance. The interior spaces are no exception: the walls reflect frescoes colorful, faithful reproductions of local works of art. Dishes are served by waiters dressed according to the habits of the time, moving inside a room furnished in Spartan style, with solid wood tables, soft light and music in the background to give a 360-degree experience.
