Polenta with gorgonzola is a simple dish and tasty, easy to prepare. The recipe is typically northern. Gorgonzola, in fact, is a PDO cheese originally from the province of Milan and polenta remains one of the dishes that characterize the culinary tradition of northern Italy. The goodness of the cheese gives the polenta a unique taste. The dish, ideal in autumn and winter, should be eaten hot and steaming, possibly accompanied by a good glass of red wine.

Polenta with gorgonzola: the ingredients

Polenta with gorgonzola can be prepared in different ways. The traditional recipe requires a long cooking in a large steel pot or in a copper cauldron. It takes a little longer to make it, but it's worth it because it guarantees perfect cooking. These are the ingredients (for 4 people) needed to prepare it:

500 grams of corn flour
400 gr of gorgonzola
2 liters of water
Salt to taste

The procedure

In a fairly large pot with high sides, boil the water with the salt. Then pour in the cornmeal and start mixing vigorously and continuously. To prevent lumps, use a whisk or spatula. After an hour of cooking, the polenta is ready to be eaten. Transfer it to dishes while still hot, and place a slice of gorgonzola on top. The cheese will melt in contact with the heat, giving the dish a unique flavor.

Polenta, a good and substantial dish

Polenta, poor but good and substantial, is one of the favorite dishes of those who live in the north, especially in the mountain villages. It is prepared with flours (cereals or legumes), which are cooked for a long time in water using a special pot called cauldron, usually made of copper. In the past, polenta was cooked right in the copper cauldron suspended above the fireplace.

The origins

Polenta has very ancient origins, but it became as we know it today only after the discovery of America, from which came the corn which gives it its characteristic yellow color. The best known and most widespread polenta is corn polenta. The latter can be eaten in a sweet or savory version, also combined with sauces, cheeses, meat and fish dishes. In addition, corn is a great alternative for celiacs, as it does not contain gluten. Polenta is a dish that despite its simplicity is rich in minerals and vitamins and is low in fat. In short, it cannot be missing on our tables. Combined with gorgonzola, then, it becomes delicious and with an irresistible taste.
