I pancakes they are extremely rich but good. A delicious recipe that arrives straight on our tables and that both adults and children like so much.
Pancakes: a bit of history
An American classic: i pancakes they are extra exquisite and very popular even in Italian tables. Their origin is truly ancient: yes, pancakes already existed at the time of the Greeks and Romans! In 500 BC, in Greece, there was a dessert based on water, olive oil, honey, flour, and it was cooked in a pan (tagēnon), known by the name of teganites. In ancient Rome, however, there were the sweet breath, based on milk, eggs, flour and honey. The first written testimony relating to this dessert dates back to the 400th century. They spread throughout Europe, especially in Russia and Germany. It seems that they arrived in North America as a result of European immigration to the New World which also led to the spread of the pancakes recipe, with further other variations.
Pancake recipe: ingredients
Here is the pancake recipe:
225 grams of flour;
1 teaspoon of baking powder;
half a teaspoon of baking soda;
1 pinch of salt;
1 teaspoon of sugar;
2 eggs;
30 grams of butter (+ butter for frying);
300 ml of milk.
Pancakes: procedure
First, take a bowl and separate the egg whites from the yolks. Add the sugar and start mixing using a whisk. In a saucepan, instead, put the butter and melt it over low heat and then let it cool for a few minutes. Then add the milk and butter and continue mixing. Separately, add the baking soda and baking powder to the flour and sift it all over the mixture, continuing to mix your mixture. Add the egg whites, but first whip them and then, add them to the other ingredients and mix.
Now put a pan on the heat (better if large and non-stick) and melt a knob of butter. Once melted, using a ladle, pour the mixture into the center of the pan. It will spread out by itself, so there is no need to do anything else. As soon as you will see bubbles on the surface, turn it over with the help of a spatula. Let it cook for a few minutes. When they have reached a golden color they will be ready to be served. Continue until you have finished all the dough.
How to stuff them?
As for the filling, you can use strawberries and garnish them with icing sugar. Alternatively, you can use maple syrup, blueberries or bananas. Do you want a super delicious breakfast? Then use some spray cream: they will be a little caloric, but very tasty! If you are a chocolate lover, you can add bitter cocoa or chocolate chips to the mixture.
Some little curiosities!
In the UK there is "Shrove Tuesday" (known as Pancake day): on the day before the start of Lent (our Shrove Tuesday to be clear), you have a good feast of pancakes. There are also the "Pancake race": it is a running competition during which each competitor holds a pan with pancakes in his hand. The race dates back to the mid-1400s, in Buckinghamshire, when a woman showed up at the church with a pan of hot pancakes. So we had the idea of creating a real competition.
