With Christmas now archived, we are preparing to celebrate New Year's Eve and, in the kitchens of Italians, we juggle the leftovers of Christmas dinners and lunches. Password: no waste! In a difficult and complex time like the one we are experiencing, marked by war, pandemic and economic recession, throwing food away is truly an irresponsible act. And, then, just arm yourself with ladles and an apron and give free rein to your imagination to create excellent recipes even with what is left of the sumptuous tables of recent days.
Recycle holiday leftovers
Of course we start with pasta which can be transformed into excellent timbales seasoned with pesto based on vegetables such as basil, rocket and olives. A way to revive the taste of the original dish by giving it a touch of freshness, without adding other sauces that would further weigh down the dish. Another leftover classic isroast which properly minced and mixed with ad hoc ingredients can be the basis for succulent meatballs in broth, with sauce and even cooked in the oven. And, again, the salmon appetizers can be used to season tasty fresh pasta to be cooked in a few minutes for a quick and easy dish.
Wine and fruit
As we well know, dried fruit abounds on the holiday table. Walnuts, almonds, pistachios that can be reused as snacks to be eaten during breaks in the office, or as a crunchy ingredient for salads or homemade desserts. Without forgetting that they can be the basis for excellent nougat or for very fragrant biscuits to be flavored with cinnamon, cloves, honey, grated lemon or orange peel.
And what to do with the wine that remains in the bottles? During Christmas lunches and dinners we toasted but some bottles were not consumed in full. So, with red wine you can make savory and sweet recipes such as drunken chicken or chocolate and wine cake. The precious nectar, both white and red, can be preserved and then reused to macerate meat or fish. So also in this case, no waste!
Dulcis in fundo, pandoro and panettone
There isn't a house where there aren't leftovers of typical traditional desserts. Panettone can become a nice filled cake enriched with cream, chopped dried fruit and liqueur. The variant with the addition of apples is very popular. Pandoro, on the other hand, can be transformed into a nice roll, also filled with cream or cream and further flavored with berries, sugar decorations or icings of various flavors and workmanship. And, again, it can also find itself on a beautiful tray with the delicious features of a Tiramisu coffee. A true paradise for gourmands who can also take advantage of many beautiful slices of panettone and pandoro to make a nice breakfast that makes you want sweetness from the morning on!
