Method
The ingredients:
- 1 cup quinoa
- 2 cups of water
- 1 courgette
- 1 red pepper
- 1 yellow pepper
- 1 carrot
- 1 head of lettuce or rocket
- 1 lemon
- Extra virgin olive oil
- Salt and Pepper To Taste
- Fresh aromatic herbs (basil, parsley, mint) to taste
- Fresh goat cheese (optional)
Start by preparing the quinoa: rinse under running water and remember that it must be cooked in twice the volume of salted water.
