The fried and spiced penne
Ingredients 4 people to
400 g of Penne or short pasta
150 g of buffalo mozzarella or fiordilatte
4 eggs
1 chilli
1 clove of garlic
A sprig of parsley
A hint of turmeric, coriander, cumin
Salt and Pepper To Taste
Extra virgin olive oil
Method
In a pan with a little oil, brown the garlic clove and add the chopped chilli.
Meanwhile, bring abundant salted water to a boil and boil the penne al dente.
In a bowl, beat the eggs, adding the spices, salt, pepper and chopped parsley.
Drain the pasta and pour it into the bowl where you previously beat the eggs, mix well.
Heat a drizzle of oil in a suitable non-stick pan, pour a first layer of pasta and let the egg harden a little.
Arrange the mozzarella on the pasta.
and pour another layer of pasta compacting everything.
Cook over medium heat until cooked, turning the pasta with the help of a plate.
