  • 320 g mixed pasta (80 g per person)
  • 3 medium sized potatoes cut into cubes
  • 250 g sweet provolone
  • 1 carrot
  • ½ onion
  • 1 stalk of celery
  • 500 ml ofwater
  • 2 medium ripe tomatoes
  • 1 sprigrosemary
  • 3 tablespoonsextra virgin olive oil
  • pepper q.b.
  • salt to taste
  • grated cheese to taste
  • 200 g sweet provola cheese, cubed

La Pasta, potatoes and Neapolitan provola cheese It's a real delight, one of the tastiest dishes in Italian cuisine.

To prepare it, we start with a sauté of vegetables with which we have to stew the potatoes in a little water.

When they are cooked, remove the vegetables along with most of the potatoes along with a little hot water and blend with an immersion blender. Set aside.

Now we cook the pasta in the pan in which the potatoes were cooked, to which we add some more hot water and cook for the cooking time indicated on the package.

At the end of cooking, add the provola and the previously blended vegetable cream, mix until the provola is completely melted and complete with the grated cheese.
