Easter at the table: we celebrate with lavish lunches that also become a consoling form to dispose of the stress and anguish of a health emergency. Easter 2021 is in fact the second that the whole world, and therefore also our country, lives in a lockdown regime due to the world pandemic. Today, Resurrection Sunday and Easter Monday tomorrow, any movement is prohibited. You cannot travel outside the region or even from one municipality to another, except for proven reasons. No trips, no trips out of town. And above all, no cheerful brigades of relatives and friends with whom to share the party or with which to have nice barbecues in the open air.
Because even reunions with relatives are prohibited to avoid the spread of infections. Then you just have to console yourself with the party lunches. But precisely because we will not be able to move from home with lunches we risk getting too heavy. Then you can follow some useful tips to celebrate at the table but without doing too much damage to our figure and above all to our health.
Easter at the table: comfort zone lunches
For example, the classic Easter lunch can be introduced with a nice plate of raw vegetables (fennel, cucumbers, radishes, beetroot) seasoned with the classic pinzimonio. The first snack that announces lunch will dull hunger and put a stop to any binge. If we really can't help but prepare the first succulents with a filling that drips calories with every forkful, we can make up for it with the latter.
For meats (braised, roasted and similar) you can use healthy cooking that requires the use of little fat. Also to accompany the main courses, it would be ideal to prepare side dishes with vegetables always raw or cooked in the oven. From the classic mixed salad to artichoke carpaccio; from baked fennel au gratin to pan-fried spinach. To finish with two sautéed mushrooms or with the classic potatoes, but always baked.
Sweets what goodness
Easter lunches end with a triumph of sweets that from north to south flood the tables of Italians with superfine aromas and flavors. Pastiere, doves and eggs and chocolate in profusion: these are the traditional delicacies that meet at the table with the many specialties of the various territories. Of course, you can't do without sweets: sugars, especially in times of great stress like the one we are experiencing, have always been a comfort zone for everyone. The desserts console, they pass the melting pot, they make both adults and children smile.
So let's allow ourselves some excess but, as long as Tuesday we return to a more balanced diet rich in fiber and mineral salts. We showcase our culinary art and all our food and wine knowledge for two days. But then we return to normal by thinking about when the pandemic will have loosened its grip. It will be the time of summer, the moment when we will have to show off our perfect physique to finally go on vacation. So let's be tempted but not too much: let's party at the table but let's love each other!
