Baked courgette parmigiana is a quick dish to prepare and very tasty. In Italy, this type of parmigiana is becoming more and more widespread
For this version there is nothing fried, so it's a lot light and easily digestible. This recipe will appeal even to those who are not great fans of this vegetable fruit.

To make this recipe you will need:
- 5 medium-large courgettes
- 120 grams of sliced mortadella
- 120 grams of sliced stringy cheese
What is the process
First of all we must cut the courgettes into slices of about 3 mm and then lay them down one at a time on a baking tray previously lightly oiled and sprinkled with breadcrumbs. Salt to your liking and sprinkle the top layer with breadcrumbs as well of the courgettes.
Bake, in a preheated oven, for 15 minutes at 200 °.
Once the cooking time has elapsed, divide the courgettes into two portions.
Form a layer of courgettes on a non-stick baking tray, place over the slices of mortadella and stringy cheese e to cover with another layer of courgettes.
Bake again for 10 minutes at 180°, just long enough for the cheese to melt.
The ideal would be to eat it hot, but this recipe is also delicious cold.
