Ingredients for 4 people:
400 gr of paccheri.
A chopped red Tropea onion.
10 pitted and chopped green olives.
Chopped ginger, about a teaspoon.
Chayenne pepper powder, half a teaspoon.
Fish sauce, 3 tbsp.
Cumin, turmeric and coriander powder, half a teaspoon x.
3 anchovy fillets in oil.
1 minced clove of garlic.
Mixed salad.
Rice flour, half a teaspoon.
Mustard oil. to taste
Salt and Pepper To Taste.
Procedure:
In a pan, sauté all the ingredients until the onion begins to caramelize
Add the mixed salad
Pour three tablespoons of fish sauce and cook over low heat for 5 min. Season with salt and pepper
Cook the paccheri in boiling salted water until cooked, add half a teaspoon of turmeric to the water
