Ovis Mollis are biscuits made with a shortcrust pastry made with hard-boiled eggs, crumbly, fragrant and so delicate that they melt in your mouth.
With this base you can make biscuits of various shapes and they can be filled with all jams and Nutella, but they can also be simply covered with icing sugar.

Ingredients
- 150 g Farina 00
- 100 g Potato starch o cornstarch
- 80 g Icing sugar
- 150 g Butter cold to pieces
- 50 g Hard-boiled egg yolks
- mezzo Vanilla pod
- Grated zest of half a lemon (optional)
- 1 pinch Sale
- qb Jam (the one you prefer)

Preparation
- First prepare the hard boiled eggs, remove the yolks and crush them with your hands or a teaspoon.
- In a bowl, work the butter and icing sugar until it becomes creamy, add the hard-boiled egg yolks and mix well.
- Sift the two flours, join them to the butter and add the teaspoon vanilla extract and quickly knead the mixture without heating it too much by working it with your hands.
- Form a loaf, wrap it in cling film and put it in the fridge for two hours.
- Once ready, form balls (I made 35 the size of a walnut), create a hollow in the center by pressing it with your thumb, place them on a baking tray lined with baking paper and place half a teaspoon of your favorite jam or Nutella in the hollow.
- Bake and cook the ovis mollis biscuits for 15 minutes at 170 °.
- Remove them from the oven and let them cool completely before serving.
Ovis Mollis are also perfect accompanied with tea or coffee and, if given as gifts to friends and relatives for the Christmas holidays, they will make you look great.
