In the heart of Umbria, at the foot of the Sibillini Mountains, lies Norcia, a town that for centuries has embodied the authenticity of the deepest Italy.

Norcineria: a thousand-year-old art
Norcia pork butchering is much more than a tradition: it's a true culture. Its roots date back centuries, when "norcini," expert butchers from Norcia, were sought after throughout Italy for their expertise in pork processing. The saying "nothing goes with the pig" finds its truest expression here.
Among the symbolic products, the following stand out: Norcia PGI ham, aged for at least a year in the ideal conditions of the Apennine climate, artisanal salamis, coppa, lonza, and corallina, a salami typical of the Easter period. Dried sausages are also available, often flavored with garlic, pepper, and wild fennel.
Nor should we forget black truffles and lentils: Umbria's treasures. Besides meat, Norcia offers two jewels of Italian gastronomy: the prized black truffle and Castelluccio lentils. The former, harvested in the Umbrian forests, is the star of numerous local recipes, from tagliatelle with truffles to scrambled eggs and flavored cheeses. Lentils, grown on the Castelluccio di Norcia plateau, are renowned for their small size, intense flavor, and thin skin that doesn't require soaking. They're the signature dish of New Year's Eve, but Norcia cuisine uses them year-round in rustic soups and broths.

Norcia's culinary scene is dominated by cucina povera, a humble cuisine where simplicity and flavor go hand in hand. Some dishes not to be missed:
