A typical and well-tried second course of my cooking, meatballs and tasty baked potatoes is a simple and quick second that everyone really likes and how many meatballs I do seem to never be enough! Potatoes flavored with preparation, rosemary, parmesan and breadcrumbs are irresistible and can become a delicious and nutritious dish.

Ingredients for 4 people
400 g minced meat
6 of rusks
1 cup of warm milk to soak the biscuits
20 g of oil
40 g of grated Parmesan cheese
1 of whole eggs
qs of salt
1 kg of diced potatoes
qs of salt
40 g of olive oil
qs of aromas for roasts
qs of fresh rosemary
1 handful of Parmesan cheese
1 handful of breadcrumbs
20g of butter
Process to make the baked meatballs with tasty potatoes
Start the preparation by soaking the rusks in a cup of hot milk, letting them melt and drain in a strainer with the pinholes by pressing to release the excess milk, it must remain a mush.
Put the chopped in a bowl with the slices, the egg, the salt, the Parmesan, the oil and add it all together; form small balls and turn them into breadcrumbs.
Wash and peel the potatoes, cut into season cubes with oil, herbs, salt and bake in a large baking pan covered with aluminum foil and bake for 50 minutes. The potatoes will be almost completely cooked, but not dry because the aluminum has kept the right humidity.
Insert the meatballs, add the butter in flakes and cook the meatballs with the potatoes after stirring very gently in the pan for 30 minutes.
In the last few minutes add the Parmesan and breadcrumbs, if necessary a drizzle of olive oil turn over and take out of the oven.
