And here they are ready, with very few ingredients and no preservatives. They are practically the same as those you buy, even better because there is no dye but only fruit puree.
Time of realization: 30 minutes + rest time
Degree of difficulty (1 to 5): 1
Ingredients for a 25 × 25 pan:
300 g of granulated sugar
120 g of glucose syrup
50 ml of water
50 g of berry puree
20 g isinglass
for finishing:
100 g powdered sugar
50 g maizena
Procedure:
Put the water, fruit puree, glucose and sugar in a saucepan. Bring to a low flame and reach a temperature of 115 ° C.
Meanwhile, rehydrate the isinglass in cold water. Once it reaches 115 ° C, remove from heat and leave to cool for 5 minutes, then add the well-squeezed isinglass.
Transfer to a planetary mixer to whip until cool.
In the meantime, prepare a pan lined with aluminum foil and sprinkle generously with the powdered sugar and cornstarch mixture, pour in the mixture and finally sprinkle again with the previously prepared mixture.
Let it rest at room temperature for 12 to 24 hours.
After this time, take the marshmallow mixture and cut them to the size you want, dip them back into the mixture and pass them through a sieve to remove the excess.
