With apples, pine nuts, with cinnamon or raisins. With whatever ingredient you prepare it, the result is undoubtedly very sweet. Trentino strudel is one of the tastiest desserts ever invented. A delicacy based on rolled pasta, rigorously filled. Recognized as Pat, that is, a product of the Italian gastronomic tradition, it has a foreign origin, even linked to antiquity.
The strudel, the origins of a popular dessert in northern Italy
It is said that one of the first recipes for strudel dates back to the time of the Assyrians, that is, to the eighth century. But they were also widespread in ancient Greece and then spread with different names and characteristics to other countries. Its derivation, the one known to us, it dates back to the ancient sweet "baklava" of Ottoman origin. It seems that it was Sultan Suleiman the Magnificent, in the middle of the sixteenth century, who spread the custom of cooking strudel in the conquered territories of present-day Europe. Hence the spread in Austria and then in northern Italy, in Trentino, then Alto Adige, Veneto. Many imitations because now the strudel is found everywhere. But few people know the original recipe. We present it to you in this one video recipe made by Giacomo Galuzzi for our partner "I love Italian food" with chef Andrea Ruisi.
As explained in the video, here is the procedure for preparing an excellent Trentino dessert
To create the pasta: spread some Manitoba flour on a surface, add the water, extra virgin olive oil, salt. Mix everything together with the help of a fork. Make the dough with your hands, and then let it rest for at least thirty minutes covered with a cloth. Let's prepare now apples which will be used for the filling of the strudel: peel them and cut them into small pieces, perhaps with the help of a special apple cutter. Then add the raisins and pine nuts, sugar, rum, cinnamon, cloves. Then mix everything.
Pick up the dough that we had previously prepared and spread it with your hands. Gently stretch it. It is then necessary to sprinkle the base with breadcrumbs and put oil on the edge. In the middle, lay the apple-based dressing prepared earlier. Roll the dough and place it on a baking sheet with parchment paper. Sprinkle the butter on the strudel. Bake in the oven at 200 degrees for 40 minutes. After taking the strudel out of the oven, sprinkle it with powdered sugar. And let's serve it. Really exquisite.
The ingredients for a real strudel are: for traditional sourdough three hundred grams of Manitoba flour, two tablespoons of oil, salt and water as required. For the filling: 2 kilograms of apples, 200 grams of raisins, 80 grams of pine nuts, 80 grams of sugar, 50 grams of breadcrumbs, a tablespoon of cinnamon, 3 of butter, cloves, rum and powdered sugar as required.
Are you ready to prepare it then? With shortcrust pastry or even with puff pastry, filled inside with the most varied types of fruit for a truly tasty result. With pears, apricots, berries. There are also savory versions. But that Dolce it is undoubtedly the one they like best.
