Lentils on the table on New Year's Eve, a culinary tradition that Italians do not give up and which boasts very ancient origins. It seems, in fact, that the custom of consuming lentils derives from Roman times who, on special occasions, gave away the 'scarsella' full of these legumes. The scarsella was a bag that usually contained coins and, therefore, when it was filled with lentils it acquired a good-luck meaning of wealth and prosperity.

Already in ancient times the benefits of these round legumes were known, rich in vitamins and mineral salts such as magnesium and potassium, as well as iron. As is known, lentils are even capable of providing a greater quantity of iron than meat; and is also an important source of fiber. Lentils are round, with a lateral flattening: a very particular shape, which is very reminiscent of that of coins. Even the name of the legume, which derives from the word "lens", refers to this particular shape. So eat lentils a New Year it would bode well because, given their coin-like shape, they would be able to bring money into the lives of those who eat them on the last night of the year.
Furthermore, it must be said that, during cooking, they increase in volume. A particular feature which, according to popular tradition, makes them perfect as a symbol of a prosperous life. Generally on the New Year's table the small legumes are accompanied by succulent sausage, a sausage made of very caloric pork, therefore also a symbol of abundance. That's why it is associated with lentils, because together they are a combination of calories, protein and taste. A perfect gastronomic mix for the lavish table of end of year party.
