Cold salad of lentils, datterini, rocket and feta

Healthy, nutritious, tasty and fresh dish. We usually eat legumes in winter, especially in the form of soups, velvety or simply cooked and eaten hot. But legumes, a source of nutritional richness, should never be missing on our tables, even in summer. So here is an excellent idea to consume them cold as a salad, with the addition of ingredients, which make our dish delicious, tasty and colorful. You can prepare this salad well in advance and maybe take it for your lunch at the office or for out-of-town outings to the sea or in the mountains. Excellent for a full meal without getting too heavy.

Ingredients for people 4
150 g of lentils
150 g of datterini tomatoes
45 g of fresh onion
80 g of feta cheese
80 g of yellow pepper
25 g of rocket
qs of vegetable broth
to taste of extra virgin olive oil
salt and pepper to taste
Procedure:
Rinse the lentils thoroughly under running water. In a saucepan pour the vegetable broth and once it reaches a boil, add the lentils and cook over medium heat. Drain, transfer to a large bowl, season with oil, mix and let it cool completely. After the time has elapsed, wash and clean the vegetables.
Cut the datterini tomatoes in quarters lengthwise, while the pepper, the fresh onion and the feta are small cubes. Finely chop the rocket and add all the ingredients to the lentils. Season with salt and pepper and add more oil if necessary. Cover with cling film and refrigerate for at least an hour before serving.
