Pumpkin fritters

Ingredients:

500g of cleaned and grated pumpkin

Two eggs

A dl of milk

50g grated Parmesan cheese

50 gr of grated pecorino

Manitoba flour to taste

Chopped parsley

A teaspoon of instant yeast for savory preparations or bicarbonate of soda

Chopped chives

Fry oil

Salt and Pepper To Taste

Preparation

In a large bowl, beat the eggs, add the milk, grated cheeses, and enough flour to form a thick, smooth batter. Add the grated pumpkin, parsley, and chopped chives. Season with salt and pepper, and finally, thicken the batter with a teaspoon of baking powder or baking soda. Fry the fritters in a large pan with plenty of sunflower or peanut oil. Drain the fritters and serve while still hot.
