This is not the classic courgette omelette fried in boiling oil but baked, an alternative way of cooking this delicious ssecond summer dish which, thus, turns out lighter and more digestible. Let's see the recipe in detail.
The ingredients of the courgette omelette
7 eggs medium sized, 60 grams of grated parmesan, 60 grams of grated rodez, 500 grams of grated courgettes, 120 g of breadcrumbs, a sprig of fresh mint e sale to taste.
Beat the eggs vigorously with a whisk, add the cheese, then the bread and mint and season with salt. Mix well until the mixture is uniform.
Grease a non-stick baking tray with a drizzle of olive oil and pour the mixture inside.
Turn on the oven a 200% a few minutes before cooking, so that the heat is evenly distributed, then cook for about 40 minutes; once the cooking time has passed, check that the omelette is cooked inside using a toothpick, as is done with desserts, at this point the baked courgette omelette is ready to be served.
