Eggplant focaccia is a dish delicious, soft inside and crunchyyou out, perfect to serve even to vegetarian friends.
What are the ingredients
- 3 eggplants great
- 200 g of Mozzarella
- 100g grated rodez
- 100 g of breadcrumbs
- 2 eggs medium
- 1 sprig of chopped mint
What is the process
First of all it is necessary peel the aubergines this way it will be easier to mix them with the other ingredients, to which they will have to conform completely.
Subsequently reduce the eggplants in very small squares and pour them in a pan full of boiling water, already salted. After about twenty minutes, drain the aubergine squares and let them cool.
At this point crumble them with your hands reducing them to a pulp and add the eggs, cheese, breadcrumbs, crumbled mozzarella and chopped mint.
Once the ingredients are well mixed, pour in the mixture in an oiled pan and bake at 200° for 20 minutes in a fan oven.
This dish can be served either cold or hot, but it is definitely a recipe to try immediately. You will like it, it's guaranteed!
