How to prepare the fruit tart
The first step to making a great one fruit tart fresh, according to the most ancient tradition of Italian grandmothers, first of all goes through the creation of the shortcrust pastry. After having properly sieved the 00 flour, add an egg, sugar and butter at room temperature a little at a time. Knead until firm, also adding the EVO oil. Once you have a homogeneous paste, let it rest in the refrigerator for at least 1 hour before working the tart.
In the meantime, realize the custard for the filling. Such as? You start by heating the milk in a saucepan, flavoring it with the addition of a lemon zest. While the liquid is boiling, work the egg yolks and sugar in a bowl with the help of a hand whisk. Add the cornstarch to the mixture and continue mixing to obtain a lump-free dough. Finally, pour the milk into the bowl and continue mixing. Firm the custard by transferring all the ingredients to a fairly large saucepan and mix with the help of a spoon until everything is completely thickened. Transfer the custard to a bowl again to add the butter and mix until the cream is smooth and bright. Leave to cool.
Resuming the preparation of the tart, make its base by spreading the shortcrust pastry with the help of a rolling pin, place in a pan and prick with the help of a fork to facilitate cooking. Bake the pastry in a pre-heated oven at 180 degrees for about 15/20 minutes, then remove from the oven and allow to cool. Once the base of the tart has reached room temperature, fill with plenty of custard, then decorate the surface with the fresh fruit, recreating your favorite designs and lines. Polish the surface of the tart with the help of food gelatin. Before serving, place in the refrigerator to allow the flavor of all the ingredients to blend in the best possible way in a perfect combination between the "buttery" taste of the pastry and the sweetness and freshness typical of seasonal fruits, especially strawberries and bananas, but also the sour aftertaste of kiwi and blueberries.
Very good!
