Stuffed pasta is a typical specialty of Italian gastronomy, appreciated and imitated even abroad. It is the pasta par excellence for parties and special occasions, to be served as a first course. Stuffed candies are an attraction full of surprise especially for the little ones. They can be filled with various fillings: from fish, meat, cheeses and, as in this case, a light ricotta, suitable for lactose intolerant and very tasty.

Ingredients for about 40 candies
300 g of flour (I mix durum wheat flour, 0 flour and durum wheat semolina)
1 egg
1 pinch of salt
1 teaspoon of turmeric powder
qs of lukewarm water
Filling
400 g of goat ricotta
1 sprig of parsley
salt and pepper
qs of grated cheese (I mix pecorino and aged goat cheese)
Procedure for making turmeric candies stuffed with goat ricotta
Pour the flours on the work table and form the fountain. In the middle, shell the egg and add the salt and turmeric and water gradually, mix everything. Work the mixture for 10 minutes and leave to rest for 1 hour covered.
In a bowl, work the well-drained ricotta into a cream and add all the other ingredients, mixing well.
Let it rest in the fridge. Take the dough and cut large pieces that we are going to roll out with the dough sheeter at number 8 (scale from 1 to 9, therefore almost to the maximum).
Cut out rectangles and stuff with the filling and roll up, press the edges to form a candy or simply a ravioli.
Place the ravioli / candies on a tray. Boil and season with simple tomato sauce and aged goat cheese flakes.
