The holidays are over, and with them the abundant lunches, dinners, aperitifs and desserts that seemed to never end. It's the classic script of every year: the holidays end with a few extra pounds.

Now it's time to take stock. But what can be done to fix it? It's time to get back on track and get in shape. To start the recovery process, there's no need for drastic diets or impossible-to-follow plans. A light but tasty cuisine is the key to successfully facing this post-holiday "detox" phase.

Farro and Mushroom Soup: The Perfect Recipe to Get You Back on Track

  • Ingredients: 1 white onion, 2 potatoes, 4 mushrooms, 1 carrot, 1 stick of celery, 6 slices of thinly sliced ​​speck, 200 g of spelt, 1 and a half litres of water, salt and pepper to taste, extra virgin olive oil.
  • Preparation: start by finely chopping the onion, carrot and celery. Cut into thin strips the speck. In a saucepan, heat a drizzle of extra virgin olive oil and fry the chopped vegetables. When they are well wilted, add the speck and brown lightly to flavor everything. Clean the mushrooms, removing any residual soil and cut them into slices. Peel the potatoes and cut them into cubes. Add the mushrooms and potatoes to the soffritto, stirring well to combine all the ingredients. At this point, add the spelt and the previously heated water. Salads and pepper to taste. Cover the saucepan with a lid and let it cook on medium-low heat for about 40 minutes, until the spelt is well cooked and the potatoes are soft. Once cooked, let the soup rest for about ten minutes before serving. The dish can be accompanied by a slice of toasted bread, preferably wholemeal and homemade. The rustic texture and flavour of wholemeal bread go perfectly with the soup!
