More record numbers those that concern some of the typical preparations of our Italy, today's protagonist is one aubergine parmigiana of 390 kg made on the occasion of the historic eggplant festival of Salice in Calabria, organized by the Nuova Solidarietà association.

The parmesan of records

For some time now, the fashion of making s has been spreading more and more XXL preparations of dishes and sweets typical of the Italian culinary tradition. After the Sicilian cassata it was the turn of the Parmigiana di Salice Calabro to set a new record establishing itself as the 'largest parmigiana in the world'.

La preparation of the largest parmigiana in the world

For the Calabrian town of Salice, this preparation is now a long tradition to be respected. In fact, the first record dates back to 2009 with 220 kg. All this was then repeated in the following years, increasing the dimensions more and more: in 2019 it reached 378 kg. Today, in 2023, we have reached almost 400 kg.

The record parmigiana is cooked according to a Calabrian gastronomic tradition consisting of four layers of slices of aubergines fried in extra virgin olive oil, and flavored with tomato sauce, basil and garlic and stuffed with mozzarella and a sprinkling of Parmesan cheese and bread crumbs. It is cooked in a steel pan built ad hoc by local craftsmen, 7,60 meters long 2,16 wide weighing over 400 kilos. Placed on a characteristic oven, with a lid of 500 kg.

The aim is not only culinary but above all supportive and beneficial, to provide concrete help to the needy people of the town and above all to raise awareness of the values ​​of solidarity and free donation. The event is in support of the Casa della Solidarietà, a city reception centre.

The Eggplant Festival 

The festival aims to raise awareness of the many possible and varied preparations that can be made with aubergines, a typical product grown in the area.

 Volunteers from New Solidarity that over thirty years create this event to make the most of local products.

The new record

The attraction event in the area always manages to capture the attention and curiosity of many. Also this year the participation was capillary. There are also many tourists present. The new record still needs to be certified by the London-based Guinness Word Records organization.
